Holiday Activities to Attend in Northern Colorado

When the weather outside is cold and gloomy, it usually means parents are inside trying to figure out how to entertain their kids. This holiday season, bundle up the family because it’s time to get out and enjoy the fun holiday activities and events that Northern Colorado has to offer. From light shows to meet and greets with Santa, there are so many ways to stay engaged with the local communities of Northern Colorado, get the kiddos out of the house (and maybe even your in-laws when they come to visit, too) and embrace the holiday season to the fullest extent.


Winter Wonderland in Fort Collins – Through December 25
Organized by Colorado Youth Outdoors, Winter Wonderland runs for over a month and offers an escape to a mile-long, immersive experience of holiday light shows and festivities. The show is open Wednesday-Saturday, from 5:15 to 8:15 p.m., and is also open on both Christmas Eve and Christmas Day! Tickets are available and sold through 15-minute time slots, with both individual and group tickets offered. Prices may vary depending on the different ticket types.

Ugly Sweater Bar Tour – December 16
Get dressed up in your best ugly holiday sweater and prepare for a night of fun at Pearl Street Mall in Boulder. The businesses participating include Avanti F & B, Bohemian Biergarten, Gemini, My Neighbor Felix, ND Streetbar, R Gallery + Wine Bar, and Rio Grande Mexican Restaurant! Go to any and/or all of these bars from 4:00 to 6:00 p.m. for some fun holiday drink deals!

The Santa Catch 5k and 10k Run/Walk – December 17
Trying to stay active this holiday season? The Santa Catch 5k and 10k in Windsor is the perfect way to do so, while also having a great time with friends and loved ones! A “Kids Fun Run” is available for children to participate in as well. Tickets are $45 for the 5k, $50 for the 10k, and free for the Kids Fun Run. Prices may increase after December 15th. Start times vary depending on which run you are participating in. Also, make sure to head over to Mighty River Brewing Company for the award ceremony afterward accompanied by food, drinks and entertainment!

St. Nick on the Bricks – Every Saturday until December 24
From 11:00 a.m. to 2:00 p.m. every Saturday up until Christmas Eve, take a trip over to the 1300 Block on Pearl Street Mall in Boulder to have a meet and greet with Santa Claus, free of charge! There will be a free electronic turbo train ride, also free of charge, for kids to journey around the mall.


Ginger & Baker 2nd Annual Holiday Market in Fort Collins – December 18
Top off your holiday shopping list at Ginger & Baker this year. Running from 9 a.m. to 4 p.m., this holiday market is the perfect opportunity to support local artisans and makers while shopping for a wide array of items ranging from clothes and jewelry to handmade ceramics. Oh, and there’s no cost for entry!

The free Cherry Creek North Holiday Market at Fillmore Plaza features 30 local artisan vendors, live music, and festive drinks and decor. Also, savor the season with a musical light walk under millions of twinkling lights. Children of all ages and parents alike will enjoy searching for eight sparkling trees that are choreographed to winter melodies in a beautifully timed show.

Light the Lights: November 23, 2022 – January 22, 2023

Every night except Mondays, at 5:45 p.m. and 6:45 p.m., an eight-minute choreographed light and music holiday show will light up the night at the City and County of Denver Building in Civic Center Park.

Following that, it will then go to a festive, static holiday display until 10:45 p.m. There will be a special light schedule on December 3 as well, to highlight activities as the 9News Parade of Lights begins in front of the City and County Building. Be there when the magic begins with the Light the Lights Celebration on November 23 from 4:30–5:30 p.m. Denver7 News Anchor Anne Trujillo will host this year’s program which will feature live holiday music performed by the Denver Municipal Band. At approximately 5:15 p.m., Mayor Michael B. Hancock will flip Denver’s giant light switch which will turn on the first holiday light and music show of the season.

Thanksgiving Dishes We Love

ThanksgivingBy now you have probably started to feel the pressure of preparing a Thanksgiving feast for all of your family and friends to enjoy. There are many staple dishes for Thanksgiving dinner that can be found on nearly every table across the country, and we all have our favorites. This holiday season we wanted to share with you a few of our choice dishes that grace Kentwood tables on Thanksgiving. If you need inspiration or ideas, feel free to try these delicious recipes out!

 

Easy Chipotle Sweet Potatoes
From the kitchen of Kentwood Broker/City Properties Owner, Jim Theye

Ingredients:
– 7 or 8 sweet potatoes/yams
– 7 or 8 cans of chipotle pepper     -salt & pepper

Steps:
1.) Roast sweet potatoes (or yams) in the oven until soft, about 45 minutes.

2.) Scoop out the insides and discard the skins.

3.) Dice about 1 can of chipotle (smoked jalapeno) peppers per sweet potato used.

4.) Mix the two ingredients, salt and pepper to taste.

5.) Bake in casserole dish at 350 degrees for about 30-40 minutes.

 

Sweet Yam Potatoes
From the kitchen of Kentwood’s Art Director, Terri Upward

Ingredients:
– 1 egg beaten     – 1 30 oz. can sweet potatoes, drained     – 1/2 tsp. cinnamon     – 1/4 cup sugar
– 2 Tbsp. melted butter     – 1/4 cup milk     – dash of salt

Steps:
1.) Preheat oven to 350 degrees.

2.) Mix all above ingredients and beat until fluffy. Pour into 8 x 8 pan.

Topping:
– 1/4 cup butter     – 2 Tbsp. flour     – 1/2 cup brown sugar     -1/2 cup finely chopped pecans

Steps:
1.) Cream butter, flour and sugar. Add pecans and spread over potato mix.

2.) Bake for 50 minutes.

 

Mixed Mushroom Gravy
From the kitchen of Kentwood’s Social Media Coordinator, Mara Calomino

Ingredients:
– 2 Tbsp. extra-virgin olive oil     – 1/4 lbs. button mushrooms     – 1/4 lbs. baby bella mushrooms
– 2 Tbsp. whole wheat pastry flour     – 1 cup unflavored rice milk     – 1 cup mushroom stock
– course seal salt     – freshly ground white pepper

Steps:
1.) In medium sauce pan over medium heat warm 1 Tbsp. oil, add the mushrooms and saute for 5 minutes, stirring often.

2.) Add the flour and remaining olive oil then stir until well combined. Reduce heat to low and cook, stirring often until flour starts to brown, about 10 minutes.

3.) While whisking, add the rice milk, mushroom stock, 1/2 teaspoon salt and 1/2 teaspoon white pepper. Simmer until thickened whisking constantly, about 15 minutes.

4.) Season with additional salt and pepper.

 

All Natural Apple Pie –
From the kitchen of Kentwood DTC Broker, Steve Travers

Ingredients (Recipe for 2 Pies):
-10 medium to large apples (any kind, organic recommended)     -1 cup of real maple syrup
-1 Tbsp. all spice     -1 tsp. cinnamon     -1/4 tsp. cloves
-1/4 tsp. nutmeg     -1/3 cup coconut oil or 1 stick of real butter

Steps:
1.) Peel and core all 10 apples. Slice 8 of them.

2.) Heat the coconut oil or stick of butter in small sauce pan. Add maple syrup and all of the above spices. Mix well until slightly boiling.

3.) Add above mix with 2 remaining apples in blender on puree setting for 30 seconds.

4.) Mix puree with sliced apples and preheat oven to 375 degrees. Place filling into 2 pie crusts, slit the top of the crusts in 6 places and bake for one hour.

 

Pumpkin Pie –
From the kitchen of Kentwood’s Marketing Director, Ashley Rosenberg

Ingredients:
– 1 pie crust     – 3/4 cup sugar     – 1 tsp. cinnamon     – 1/2 tsp. salt     1/2 tsp. ground ginger
– 1/4 tsp. ground cloves     – 2 large eggs     – 1 15 oz. can pure pumpkin
– 1 12 oz. can evaporated milk

Steps:
1.) Preheat oven to 425 degrees. In a small bowl mix together sugar, cinnamon, salt, ginger and cloves.

2.) Beat eggs together in a large bowl. Add sugar mixture and pumpkin, stir to combine. Stir in evaporated milk until well combined.

3.) Pour mixture into pie shell, covering edges of crust with foil. Bake for 15 minutes.

4.) Reduce temperature to 350 degrees, bake until filling is set then cool on wire rack.

 

Pecan Pie

Ingredients:
– 3 eggs beaten     -1/2 cup sugar    – 1/2 cup dark karo syrup     – 1/2 cup light karo syrup
– 1/4 tsp.teaspoon salt     – 1 tsp. vanilla     – 1/4 cup melted butter/margarine     – pecans

Steps:
1.) Mix first seven ingredients together and pour into pie crust. Sprinkle pecans over the top of the filling.

2.) Cover the edge of the pie crust with foil until last 20 minutes.

3.) Bake at 350 degrees until set.
